Ice Cream Pie Recipes

Chocolate Ice Cream Pie

(Perfect recipe for chocolate/peanut/peanut butter lovers.)

1/4 cup corn syrup
2 tablespoons brown sugar
3 tablespoons butter
2 1/2 cup Rice Krispies
1/4 cup peanut butter
1/4 cup fudge sauce
3 tablespoons corn syrup
1 quart vanilla ice cream (slightly softened)
1/4 cup chopped salted peanuts

In a small saucepan, combine the 1/4 cup corn syrup, brown sugar and butter. Bring the mixture to a boil. Remove from heat and add in the Rice Krispies. Allow to cool slightly and then press the mixture into a 9-inch pie pan. Put it in the refrigerator to chill. While it is chilling, combine the peanut butter, fudge sauce, and 3 tablespoons corn syrup. Mix well and pour half of the mixture on the bottom of the pie crust. Spread the ice cream over the chocolate mixture in the crust. Then spread the rest of the chocolate mixture over the ice cream. Sprinkle the peanuts over the top and put it in the freezer. Allow mixture to freeze overnight. Put the pie out for 10 to 15 minutes before serving so it cuts easier.

Malted Milk Ball Pie

(Perfect recipe for the malted milk ball lover in your life.)

1 pint vanilla ice cream (slightly softened)
1/2 cup crushed malted milk balls
2 tablespoons milk, divided
1 9-inch graham cracker crust
3 tablespoons chocolate malted milk powder
3 tablespoons marshmallow topping
1 cup whipping cream
crushed malted milk balls (enough to sprinkle over the top)

Put the ice cream in a medium bowl that has been chilled in the refrigerator. Add the 1/2 cup crushed malted milk balls and one tablespoon of the milk to the ice cream. Mix together well. Put the ice cream mixture into the graham cracker crust. Put the pie in the freezer. While the pie is freezing, combine the chocolate malted milk powder, marshmallow topping, and the other one tablespoon of milk together in a medium bowl. Add the whipping cream and whip the mixture together until soft peaks form. Take the pie out of the freezer and spread this mixture over the top. Freeze overnight and then sprinkle the crushed malted milk balls over the top just before serving.

A student services agency, Arabesk, maintains several apartments in Damascus for foreigners studying Arabic and Islam in the University of Damascus and the other schools in the Syrian capital. The location of one apartment in the Al Midan district allows the foreign students to take a ten minute bus ride to the university, to walk to the Baramka Souk for shopping, or continue on to the government offices in the city center. Usually the cul-de-saq street remains very quiet. However, at 12:20 every afternoon, the schools at the ends of the block release crowds of children. The children and teenagers mob the two grocery stores for sodas, potato chips, candy, and ice cream. This video shows a foreign professor encountering the waves of students leaving the schools. The stationary store on the block provides quick, cheap photocopies for the foreigners in the apartment above the shop -- and photocopies for the students and teachers of the schools. In this quick video, the professor studying Arabic in Damascus goes to the downstairs photocopy shop -- and then the elementary school releases a thousand noise-makers. ( Foreigners will find the children of Damascus very polite and correct. However, they stare at foreigners, they will often shadow foreigners to listen to ideomatic English, or they will practice their classroom English with foreigners. )

Pink Spoon Marketing For Psychotherapists

Much has been said over the years about the power of thinking positive thoughts and focusing on what you want. Napoleon Hill wrote about this in the early 1900s as he interviewed many of the most successful businessmen of the day. Then of course there were books from Dale Carnegie and Normal Vincent Peale.

Many psychologists, most notably Marty Seligman, share the clinical benefits of Positive Psychology. Our culture really jumped on board the Law of Attraction with the release of The Secret a few years ago (along with all the books by Abraham Hicks and Michael Losier).

Now I am not going to get into a spiritual debate here. My intention is to invite you to notice how things go when you focus on what is wrong in your practice - or for that matter in your life. It is easy to do that because bad stuff takes attention and energy.

But for now, let's just take a moment to gently and gratefully remember the good stuff. Watch a cat stretch or a dog's tail wag excitedly. The world is filled with wonderful and very funny things and our time here is short. Let's have a ball!

A note about this article... It came from some conversations in my beta group. We talked about a pink spoon as the first (and no-charge) product in a multiple streams of therapy income business. But I think now all practice websites should offer a pink spoon - sooner rather than later.

Amber, my online business manager and I were talking yesterday about this. When we first started working together years ago, not everyone had email addresses. And most therapists didn't have websites and the online therapist locators didn't exist. Yet here we are - some of us have so many email addresses we can hardly keep track.

So, I am going out on a limb here and say that you need to give something of value away for free on your site. I don't think this is really optional anymore. We call this no-charge item a pink spoon - a free taste - just like the tiny taste you get at the ice cream store. This pink spoon is important whether you want a multiple streams of therapy income business or want to increase the number of clients coming into your practice.

Chris Anderson, business author of the book FREE writes that the culture expects to search the web and view and download information at no-charge. Take a look at You Tube - where you can view millions of videos at no-charge. My 83 year-old Dad enjoys sharing his favorites with us (He loved Susan Boyle and the Von Trapp dancing in the Belgium train station - but, really, who didn't?).

I predict that in the not so distant future, websites that market a practice without offering a no-charge informational product will be passed over in favor of those that do. Anderson suggests that sooner or later all businesses will need to learn how to compete with "free."

Actually this is great news for you! You have a ton of information in your head and in your heart that can help people. You helped the young mother who was terrified when she found out she was pregnant again. You helped the estranged couple to find love with each other again. A frightened child can smile again thanks to you. Your wisdom, day after day, session after session, heals and transforms. The powerful questions that you invite your clients to consider propel them to happier, more functional lives. Imagine how wonderful it would be if more people had a chance to experience that wisdom. By putting a no-charge info product (audio, report or video) on your website, you help people you may never meet in person. Plus you will create demand for people who want to go deeper and do one on one work with you.

What does it take to create your pink spoon? First, ask yourself "What would my web visitor be interested in?" Then decide if you want to create a written, video or audio product. Today you will find that there are some very simple tools to help you create your first pink spoon.

After that, you'll need some technical skill or a high school student to help you get it on your site. Then keep track of how many downloads it so you know how well it is working for you.

It is just about here that I find many bright, motivated therapists seem to, well, stop. They have thought about a pink spoon and have some ideas for content. But the transition from idea to product seems difficult.

Is this you? Do you find yourself with ideas but for some reason haven't moved ahead in ways you'd like? A client of mine in North America recently said "When I'm afraid it won't be perfect, I stop myself." Here is the advice I offered her: Focus on completion not perfection. While it is important to think about the content of your pink spoon and how you want to deliver it, don't let the desire to make is perfect keep you stuck. Set a date. Get it done. After all I can tell you from experience, it will never be perfect - you will revise it later. So here is your permission to make it just 'good enough.'

Selling Your Company - Finding the Right Buyers

We are in the middle of a merger and acquisition engagement representing a Human Resources Consulting company. We had contacted several industry players and had gotten some good initial interest. Several buyers dropped out because their entire management team was comprised of family members. We asked our client to take their company off the market and to bring in at least one non family executive that had the authority and the ability to run the company. They successfully implemented this change and asked us to take them back out to market.

Because their business is counter cyclical and actually grew during the economic downturn they posted some pretty impressive growth and profit numbers. It was difficult to determine how much of the improvement was due to the addition of the new senior manager.

As we re-launched our marketing efforts, we identified several interested buyers. One buyer was particularly interested and after signing the confidentiality agreement and reviewing the memorandum, contacted us almost daily with additional detailed information requests. Before long he started to grill us about selling price expectations. As we usually do, we deflected his requests and asked him to put together his letter of intent based on the value of the business to his company.

He started giving us a lecture about valuing services companies whose assets (meaning people) walked out the door every evening. He pointed out that their revenues were based on new sales each year and not "contractually recurring revenue". We had our client put together for us a chart that showed the "historically recurring revenue" generated from their top 20 clients over the past five years. This was our way to demonstrate some consistency and predictability of revenues.

As we conversed further, my radar started buzzing loudly. This guy was getting ready to provide a low ball offer and was trying to sell me on all the reasons why I should go back to our client and pitch his offer. I politely listened to his well practiced approach for a little while longer. Then he came up with the statement that I just could not let go. He said that last year's revenues were an unusual upward spike and "I am just going to use 2008's revenues as my basis for my offer. Well, I just could not let that one go. I asked him how he would have made an offer if last year was unusually bad, but the prior five years were strong. He would not respond, but of course, the answer was that he would have made his offer based on the new trend.

There are thousands of business buyers out there that are just like this guy. There is a famous residential real estate investor that has written a book and gives classes to help individuals become real estate moguls. I could sum up his book and his class in one sentence. Find 100 people with their homes for sale. Approach them aggressively and make a low ball offer and one of them will take it.

When I reviewed where our buyer had originated, I traced it back to a posting we had made on our business broker's association Web Site. As I think about it, these Business-for-Sale Web Sites actually give these buyers a powerful tool to actively and aggressively contact their 100 potential sellers. As I thought about this, sure enough, I have seen this behavior repeated multiple times and the source was always a Business-for-Sale Web Site.

So we are always preaching to our prospective clients to get multiple buyers involved in the process. If they post their business on one of the Business-for-Sale websites, they may get multiple buyers interested, but they are those buyers that are contacting 100 sellers very efficiently through the power of the Internet in order to make their low ball offers.

But I digress. Let's get back to our client. The good news is that we had 6 other industry buyers that we had contacted and they were looking for acquisitions that were based on acquiring new customers or adding another product offering, or leveraging their sales force or install base. In other words, their buyer motivation was not to buy a company with a low-ball offer.

The only way we can encourage buyers to make fair offers is to conduct an outbound marketing campaign to industry buyers that have strategic reasons for making acquisitions. If we can get several involved, then the buyer that comes in and says that he is going to base his offer on 2008 performance, is easily eliminated from consideration. If a business seller is only going to attract these inbound, bargain seeker buyers from Web Sites, he/she will only be getting low ball offers and wasting a lot of time.

But trust me, most prepared food has a lot of added air (breads, ice cream, etc) but that 1/2gallon of chocolate milk was the hardest i have done... so far. :) I am working my self up to be able to put away a full gallon of chocolate milk in under an hour... stay tuned for more!

Four Candy Myths

We are a candy-loving world and there's no doubt about that. The only problem is when people who aren't exactly one of us tend to make things ugly, especially for the retro sweets varieties which we grew up with will probably grow old still yearning for. The good news is, no matter how they vilify those tongue treats, they just can't do much anymore because now we know the truth. Now we know many truths about things they once said were bad about candies. Now, we don't have to feel guilty about those jelly beans and sherbets and toffees and every little nostalgic sweet satisfaction we may ever so often help ourselves to because now the line is clearer between fact and myth.

First, no candy doesn't makes children go crazy. People used to believe that if a kid had a mere bagful of sweets, he'd be all around the place horsing around and playing like it would be the last day of his kid-hood. In truth, there's not much, if any, truth to that. Researchers have countered claims that candy causes hyperactivity in children and this is now scientifically accepted.

Second, candy causes children to lose their teeth to cavities because of their sugar content. Actually, these same sugars are found in many other foods such as bread and even rice. In other words, all carbohydrate-rich foods are potential causes of tooth decay. Candies, whether modern or traditional sweets, need not be singled out just because kids tend to be crazy about them. As long as adults are responsible enough to teach their kids about oral health, everyone will be free from cavities and happily so.

There's also this thing about chocolates being believed to raise blood cholesterol levels because of their saturated fat content. This makes for the third myth that deserves a total junking. Yes, chocolates have saturated fat, but no, it's not the type that raises cholesterol levels because the fat is sourced from cocoa, a plant.

Lastly, any lover of old-fashioned sweets would be quick to refute the claim that is also the biggest joke of all - no candy is healthy. To somebody who grew up with such fond memories of those fat-free but equally luscious retro candies, this is simply unacceptable. And talk about licorice which, needless to say, has been scientifically recognized as a cure for many medical conditions. Obviously, these varieties do not contain fat or cholesterol or any other substance that may prove to be a health hazard. This definitely makes them count as snacks that are so much healthier than what they're given credit for.

How to Succeed When Shopping the Sales

In response to the lack of spending on the high street, some big chain stores are already discounting their wares by 20% to 25% in a desperate bid to get the nation spending again. Whilst this is great news for shoppers, caution needs to be heeded to.

It is very tempting to rush out and buy lots of new clothes in the sales, particularly at present when there is probably more choice than during the usual January sales, when only the dregs are left. The trouble with shopping in the sales is that it is all too easy to get carried away by the cut down prices and buy more than you need and more than you can afford. You may find yourself buying items you don't really want, they just seem like a bargain that you cannot resist.

So that you get the most benefit out of the bargains on offer, just take a moment to consider the following tips, before you grab your bag and head for the shops.

1. Tidy your wardrobe. Take some time to go through the clothes you already have. Decide which items you will wear again and get rid of worn, torn or dated items.

2. Make a list. Try to think carefully which items of clothes you really need. It may be a dress for a Christmas Party or some smart work clothes.

3. Set yourself a budget. It is important to decide how much you are going to spend before you go out. There will be lots of enticing offers and it is all too easy to get carried away.

4. Spend some time looking on the internet. Most of the big stores that are having sales have websites that are easy to navigate. Write down the items you are interested in and make sure that the items you are choosing co-ordinate with what you already have or at least with each other. Remember to add up the cost and make sure it is under your budget, then you will have a bit spare for a small impulse buy.

5. Make sure you have had something to eat and take some water with you. Don't rush; make sure you have plenty of time so you can try things on before you buy.

If you stick to this plan, you should come home with clothes you will wear again and again and know that you have saved yourself money and time.

Tips For Making Your Favorite Southern Candy

There is nothing quite like the smell of our favorite southern candy cooking in the kitchen.  Mmmm.  It causes one's mouth to water at the mere thought.  And nowhere will you find more exquisite flavors, textures, and variety than in the deep south.  From New Orleans pralines to our favorite chocolate candy, homemade southern candy is sure to be everybody's favorite.

Pralines are candies made of nuts and sugar. Here in the deep South, pecans are often at a surplus, so pecan pralines are popular.  Whatever the recipe, you'll need to cook candy to a "soft ball stage" before adding the pecans. When you drizzle a bit of candy into a cup of cold water, it should form a  soft ball which does not hold shape. The candy should flatten out between your fingers.

Chocolate fudge and chocolate candy are not the same thing. Chocolate fudge is more dense than candy, is heavier, and usually served in smaller, thicker chunks.  We don't know if it's true or not, but according to the tale, fudge was created by accident.  Over 100 years ago somebody trying to make caramel "fudged" the recipe - hence the name.

Here are a few tips to help in your own kitchen when you make these delectable treats.

1.    Stay away from candy making on rainy days. High humidity will not allow the candy to harden, and while it may still taste great, sticky candy is hard to handle. While we have eaten our share of chocolate candy with a spoon, we don't recommend it.

2.   Use good quality cooking vessels. Cheap pots don't heat evenly, so your results will likely be inconsistent. Grab a heavy pot in which to cook candy. Copper bottom pots are particularly good.

3.   Cook candy at the appropriate heat. As long as you are stirring the praline mixture (or chocolate fudge or candy), you can keep the temperature up pretty high. Once the candy starts to bubble you should reduce the heat to medium and let it cook a bit. 

4.   Stay with the pot. Okay, at least stay in the kitchen. Candy needs to be stirred often. It is relatively easy to scorch candy and that's a taste that is difficult to acquire.

5.   Use a candy thermometer to determine whether or not the candy is ready to take off the heat, at least until you have cooked the recipe enough times to be really comfortable with it.

6.   Once you have removed the candy from the heat, be patient when it comes to reducing the candy temperature so that you can pour it. If you try to get it to the pan too quickly, you could end up with a nice fudge or praline sauce! Beat the candy with a heavy spoon until it begins to stiffen.

I once had a friend who insisted that a real pasty should not have carrots in it. Carrots haven't got any reason to be within five feet of a pasty, according to him. He said that if somebody had the audacity to include carrots in their pasty, then it was instantly no longer a Cornish pasty. He was fervent about this to the point I would describe him as a zealot.

This friend also believed that he was a train, and that when he blew a whistle, people followed him to a pub. This is why I questioned his views on pasties.

Whilst I cannot, in good faith, say that carrots have been a staple of pasties for centuries, I can say that the tendency in Cornwall has been for a pasty to be filled with whatever is available. There is a piece of folklore that claims the devil will never set foot in Cornwall for fear of being turned into a pasty, and pickiness about food is not something that one associates with the common folk through the centuries of British history.

Of course, it is still possible to buy a traditional Cornish pasty, and maybe it is the prototypical pasty, but a pasty should not be limited to just one filling. With pasty shops, and even chains of pasty shops, spreading throughout the country, the fillings have moved away from just 'Traditional Cornish' and 'Cheese and Onion', and once again it is possible to get pasties with almost anything imaginable inside. I have eaten Banana and Chocolate pasties, and have a mind to buy and eat an Apple, Rhubarb and Custard pasty. Curry pasties, spicy chickpea pasties, even Mexican and Chinese pasties, which are as far away from Cornwall as I can imagine a pasty filling be.

So, when on holiday, or even just when buying lunch, don't feel limited to a traditional pasty; go wild.

Recipes For Easy and Delicious Frozen Pies

Frozen pies are always a great treat. But as we head into Spring and Summer, these delicious cold pies become even more of a hit. Here are a couple of great recipes that are easy to make, taste delicious, and make a lovely presentation to impress your family and/or guests. Try either Toffee Bar Crunch Pie or Granny's Chocolate Chip Ice Cream Pie. Oh why not just try them both!

TOFFEE BAR CRUNCH PIE

1/3 cup caramel dessert topping
1 1/2 cups cold milk
1 pkg (4-serving size) Vanilla flavor instant pudding and pie filling
1 tub (8-oz) frozen whipped topping, thawed
6 bars (1.4-oz each) chocolate-covered English toffee, chopped
1 Graham Cracker Pie Crust

Spread the dessert topping on bottom of the graham cracker crust. Pour milk into a large bowl and add pudding mix. Beat mixture with a wire whisk for 2 minutes. Let stand for 5 minutes. Stir in the whipped topping and chopped toffee bars. Spoon mixture into the crust. Freeze for 4 hours or until set. Let stand at room temperature for 15 minutes before cutting. Store any leftover pie in the freezer.

GRANNY'S CHOCOLATE CHIP ICE CREAM PIE
Note: This pie needs to freeze approximately one hour before serving!

1/2 cup chocolate syrup
1/3 cup semisweet chocolate morsels
2 cups crispy rice cereal
1/4 cup sour cream
1 quart chocolate chip ice cream, softened

Lightly spray the bottom of sides of a 9-inch pie plate with butter-flavored nonstick cooking spray; set aside.

In a small microwave-safe bowl combine the chocolate syrup with the chocolate chips. Microwave on high about 45 seconds or until hot. Stir until all the chips have melted and the mixture is smooth. Reserve 1/4 cup of the mixture.

In a medium bowl combine the remaining chocolate mixture with the crispy rice cereal and mix well to coat all the cereal with chocolate. Press the mixture onto the bottom and sides of the pie plate to form a crust. Put in the freezer until the crust is firm. This should take about 15 minutes. Allow ice cream to soften during this time.

In a small bowl combine the reserved chocolate mixture and the sour cream; mix well.

Spread half of the ice cream in the prepared pie shell. Drizzle half the sour cream mixture over the ice cream in the crust. Top with the remaining half of the ice cream and drizzle with the remaining sour cream mixture. Cover and freeze for about an hour or until firm.

Dealing Effectively With Temper Tantrums

Does your child have temper tantrums? If you answered "No" to that question, you get a prize! But chances are you answered "Yes."

The question is not so much "How can I eliminate temper tantrums?" but is probably "How can I deal effectively with temper tantrums?"

First, let's discuss what is a temper tantrum. Think about it - You child wants something and he or she cannot have it. Your child may want an ice cream cone, may want to stay up later, or may want to watch more TV. Whatever it is, they want it and cannot have it.

If you think about it, we as adults also want things we cannot have. Sometimes we also "blow up" and lose our temper. We usually don't lay on the floor and beat our hands and feet, but we often scream. We often sulk. If we are driving and someone gets in front of us, we may honk out horn for a full minute.

Your two year old, or your four year old does not have a horn to honk and may not even have the words to express how they are feeling. Yes, your child may not have the words to express their feelings. Their vocabulary is not as big as yours and cannot express what they are feeling. Imagine how you would feel if first you are upset and then on top of that you can't even express what you are upset. How frustrated would you be!

So the first part of dealing effectively with a temper tantrum is to understand what is going on for your child.

Once you understand what is going on for your child it is very easy to realize when the best time to deal with it is. Or, actually, is not! While your child is angry, upset and frustrated, they cannot calm down and they cannot change their behavior. Once a tantrum gets started, I would advise you to not try talking to your child. In a little bit I will tell you what you should do!

There is a famous psychological theory by B. F. Skinner that talks about how to encourage a behavior and how to eliminate a behavior. The bottom line is that to change a behavior you either have to change what comes right before the behavior or what comes right afterward. So, for example, if you offer your child a sweet if they stop their tantrum, you will probably be reinforcing the tantrum behavior, something you do not want to do. Negative reinforcement also works, but I would not advise that. If you hit your child every time they have a tantrum, it would eventually stop the tantrum but will lead to much bigger problems down the road. So do not follow that route. Even screaming at your child is not a good idea. That just shows your child that screaming when you are angry is okay. That is sort of like the tantrum they were having in the first place!

What I am about to tell you may sound counter-intuitive, but it works. Ready? Do nothing. Okay, if you want to do something, take deep breaths. Be a role model for your child in how to deal with anger. While they are having a tantrum, sit next to them and take deep breaths. Chances are that the first time you do this, your child will look at you like you have lost your mind! That's okay because you want to break a routine and, by doing that, change a behavior.

Once your child calms down, take them onto your lap and give them a kiss and say "I love you and I want to teach you something." This will probably intrigue your child and you now have a "teachable moment".

Simply explain that everyone gets angry and it is okay to be angry. The problems start with what people do when they are angry. Some people who get angry scream a lot and that doesn't help anything. Some people who get angry start hitting, and that is a very bad way to deal with it. Explain that you were angry because of the temper tantrum and you choose to take deep breaths and calm down and then talk about it, and that is a very healthy way to deal with anger.

Tell your child that from now on, when he or she gets angry, you are going to teach them to calm down and talk about it. Explain that learning new things takes a while and you expect that your child may not get it right every time, but that is okay. You will keep teaching until they get it!

I was just listening to a podcast with Dr. Carol Look who is an experienced psychotherapist. She explained that almost all problems are simply patterns. Think about it. If you run out of money on the 25th of every month, it is a pattern. If your boss gets upset with you every time you hand in a report late, it is a pattern. Dr. Look goes on to explain that if we change the pattern, we will fix the problem.

So think about if there is a pattern to your child's temper tantrums. Does it happen at 2PM every day when he or she is ready for a nap. Let's change the pattern. Perhaps at 1:45 every day you can sit down and read a book to him or her.

Does your child have a temper tantrum every time you want to leave the park? Perhaps you can throw a ball back and forth as you are leaving the park so the play is not stopping.

I would advise you to make a list of all the temper tantrums for one week and look for a pattern. Then, break the pattern. With a little effort, you can eliminate most of the temper tantrums and teach your child an important lesson for life!

So in a nutshell, first look for a pattern in your child's temper tantrums and try to break the pattern. If a temper tantrum starts, let it run its course and model for your child how to deal with being upset.

Wondering Which Ice Cream Making Machine Will Suit Your Needs Best?

Ice cream making machines are extremely popular household appliance for obvious reasons. The fact is that making a delicious treat is much easier today than it used to be. If you've done any research to determine which machine is best for you, you'll know that there are three basic types available. In this article, we will explain each type and which is best for your particular application.

Before we get into that, you may be interested to know that ice cream has been an enjoyable dessert for over two centuries. Now we have automatic ice cream makers that replace the old paddle and bucket used in days past. Ice cream making machines usually cost $30-$50, and will produce 4 quarts if using a plastic bucket. Larger machines usually cost a bit more.

The next type of ice device doesn't use ice or a bucket, but instead uses a large bowl which is filled with freezer gel. This gel freezes and then melts slowly, which keeps things cold for a while. When making ice cream, the frozen ball is placed in the machine, and the ingredients are added. The small churning device is then lowered into the bowl and mixes the ingredients while they are being frozen at the same time. These types of machines are the most popular since they are so easy to use and clean. You can get a 1 to 1.5 quart model for around $50, but some larger models can run from $50-$100.

The last type of automatic machine is one which has a built-in compressor that freezes the ingredients. The compressor is churned as the ingredients are frozen. This type of machine is more expensive than the gel models and can run up to $200 or more. However with these, multiple batches of a wide range of frozen deserts can be made without having to freeze the gel a second time.

Some things to consider before purchasing a home made deserts are these:


The noise level of the machine in your home
The initial expense of purchasing it
Your available storage availability - some machines can be pretty big
Your usage amount - they can be pretty messy and require cleaning
The ease of setting up the machine and using it

Before you purchase be sure to read the instructions thoroughly before operating, and of course have a great time with your ice cream making machine.

I sat on my bed and ate my pie and ice cream, wishing this day would end. I finished eating and then saw that it was 9:30. I sighed and then walked over to my keyboard and started to play again, hoping not to be disturbed. I just played and sang with all of my heart for a while and then I noticed it was 11:30. They must have been in bed because I looked and saw that all of the lights on the upper level of the house were all off and I knew those were the girls rooms and that all of the lights in the lower level were off too. They must have been tired from all the entertaining. I unlocked my door and saw a note outside of it. Nicole- Clean up! We dont want to see this when we wake up! Your step mother I always hated when she did things like this. She is no mother figure of any kind to me. So, I went downstairs and cleaned up all of the plates and cups. The half-drank coffees and waters; the crumb-filled plates. I turned on my iPod and Jimmy Buffett was on. I loved his music and he was my mothers favorite artist. That fact was something that always cheered me up; that something that my mother loved was around so that I can love it just as much as her. His music always calmed me down and his lyrics were so creative. I really wanted to be as creative as him, but Im not really a creative writer. I am, but I cant gear my head to write songs. Delicious Chocolate Mocha Almond Homemade Ice Cream

Homemade old-fashioned ice cream, what could be better? I remember being much younger and my mom making vanilla ice cream using rock salt, ice and an electric ice cream maker. It would come out of the ice cream maker soft and soupy. I don't remember the ice cream ever actually making it to the freezer, as my brother and I would eat it as soon as it was ready from the ice cream maker.

Being older now, I still enjoy vanilla as much as the next person, but love many new flavors such as this chocolate mocha almond ice cream recipe. I hope you will as well.

1 Cup whole milk

5/8 Cup granulated sugar

8 Ounces milk chocolate chips

2 Cup heavy cream

1 teaspoon vanilla

½ teaspoon almond extract

2 Tablespoons Coffee concentrate syrup (can instead use cold coffee or instant espresso)

Heat the whole milk until it is just bubbling around the edges (this can be done on the stovetop or in the microwave). In a blender or food processor fitted with a metal blade, pulse to process the sugar with the chocolate until the chocolate is very finely chopped. Add the hot milk; process until well blended and smooth. Transfer to a medium bowl and let the chocolate mixture cool completely. Stir in the heavy cream, vanilla and almond extract. Cover, refrigerate, and chill for 2 hours longer.

Following the directions on your ice cream maker, pour the mixture into the container and let mix until thick, about 20-25 minutes. Can be enjoyed immediately or if you want a firmer ice cream, transfer into an airtight freezer container and place in the freezer at least 2 hours.

***This recipe is for a 1-½ quart ice cream maker container. Do not double this recipe, as the mixture will expand while it is being stirred in the ice cream maker.

This is a very smooth and silky chocolate ice cream recipe that would be perfect with another dose of chocolate sauce drizzled on top and sprinkled with sliced almonds. Happy eating!

5 Survival Tactics for When Everything Goes Wrong

You know the type of week.

* You've worked hard and are gearing up to
launch a new product when a vendor calls and
says that he can't get the new website up on
deadline which is "okay" because the graphic
artist's computer crashed and your product
picture isn't ready anyway. They'll get back to
you.

* Taxes are due for those who got extensions
and, in some previous insanity, you agreed to do
them for friends and family. But you still need
information and the tax deadline looms.

* Your hubby needs reading classes but you
can't find the credit card which will give you the
big discount. It's gotta be around
somewhere.

* Your sister wants to borrow your AAA card - it
must be with the missing credit card.

* Your business phone line stops working and
the telephone company insists the problem is in
the home and they can't get to you for a
week.

* It hasn't rained for weeks and yet the dog is
covered in mud and lying on the couch.

* Your largest client calls on a Friday afternoon
and requests the impossible. This was preceded
by your smallest client calling and demanding
that you drop everything as her every need is
*urgent*.

* The bathroom toilet stops working and then
starts leaking and your plumber is on
vacation.

What do you do when it all goes wrong?

1. Laugh.

Laugh hard and laugh often. Laugh like there's
no tomorrow - given the above, there may not
be.

Seriously though. . .laughter will put you in a
much better frame of mind to deal with life's
interruptions without losing your sanity.

2. Breathe.

If laughter isn't possible, and sometimes it just
isn't, then focus on your breathing. Breathe in
and out, in and out as deeply as possible until
your pulse stops racing or you let go of the
throat that somehow found its way into your
grasp.

3. Regroup.

When the walls are caving in around you, take
five minutes and figure out what you can do to
keep at least one thing moving forward.

Follow-up on the email that may land you a new
client. Submit your article to the various article
submission sites. Pay a couple of bills. Do one
thing, anything so that you can cross something
off your *list*. It's probably best if this
something doesn't involve interaction with
others!

4. Give thanks.

"What? Give thanks? Are you insane?"

I can hear the grumbling from here. Do it
anyway! Grab a piece of paper and make a list
of everything that you are thankful for - chances
are, you have it better than millions of
others.

Here's a quick list of things that I know I'm
grateful for: my health, family and friends, my
pets, my business and my clients, sunrises and
sunsets, flowers, chocolate ice cream, the sound
of the ocean and a crisp New England fall
day.

5. Get out.

Get out of the house and out of the office.
Whether you choose to go for a walk, have lunch
with friends, go window shopping (leave credit
cards at home) or browse the shelves at your
local library, get out and enjoy yourself for a
bit. You'll return in a much refreshed frame of
mind and ready to tackle whatever life throws
your way.

Let's be real. Sometimes problems are just
problems and not "opportunities". Sometimes
lemons make bad lemonade. And not all clouds
have a silver lining. When everything goes
wrong, try one (or all) of the above techniques,
accept it and move on knowing that things
will get better!

Italian Dessert Cannoli Recipe

Cannolis are a great Italian dessert and they were said to have been developed by Sicilians in Palermo, Italy. These fried wafers are filled with a mixture of ricotta, candied fruit, chocolate, and other ingredients, and they are very, very tasty! Sicilians are supposed to have created this great dessert recipe, and I think that they are just delicious. I hope that this recipe is fairly easy to follow. You will need some type of dowel or metal tube that you will use to form out your cannoli shells. If you have a 3 ½ inch in diameter ring or even a 3 inch ring, you will need this to form the shape of your shells, also. You will also need a deep fryer, or a pan that is deep enough for these shells to float in oil.

Ingredients for Cannoli Shells:

3 Cups of unsifted flour

1/4 Teaspoon of cinnamon

1/2 Teaspoon of salt

3 Tablespoon of granulated sugar

2 eggs

2 Tablespoon of firm butter cut into small cubes

1/4 Cup of a good Marsala wine

1-2 egg whites, whisked slightly

First thing is to sift the flour with salt, cinnamon, and granulated sugar. You will make a well in the center of your sifted flour mixture. In the middle of the well you have made you will add the egg and butter and start mixing with a fork. You will work the egg mixture with the fork from the center out, to incorporate the moist egg with the flour mixture. You will then add your Marsala wine slowly until dough begins to come together like a playdough mixture. You will then start working the dough with your hands to form the dough into a dough ball. You will then cover and let the dough rise for about 10-15 minutes.

If you have a stainless area to work on great, if not you will need a wooden cutting board. You will need to slightly dust the area you plan to work on with a small amount of flour. You will then roll out the dough into 1/4 inch thickness. You will then use your 3 ½ rings and cut the cannoli shell circles. You will then use a rolling pin to roll the circles into oblongs or ovals. You will then take your dowels or tubes and wrap the dough around cannoli forms. You will then whisk your egg white, and seal your dough edges by using a brush or very clean hands if you have no brush. You will then roll up ever so slightly the ends so they will have a very faint lip or ring on the edge of the cooked product.

At some point when you are ready to get your shells into the oil to start cooking them you will heat your oil to around 350 degrees. Once it is at the proper temperature you will begin to fry two, or three at a time in deep hot fat for about 1 minute, or until lightly golden. Remove with tongs to paper towels to drain, you will then let cool for about 30 seconds to one minute and then slip out cannoli form, holding shell carefully so you will not break it. Cool shells before filling. Let them hang out while you will start to make your filling.

Ingredients for the Cannoli filling:

3 lb. ricotta cheese, that has had moisture removed

2 1/2 Cup of confectioners' sugar

1/4 Cup of semi-sweet chocolate pieces or grated sweet chocolate

1/4 Cup candied cherries, finely chopped

1/2 Teaspoon of cinnamon

1/2 Cup of chopped pistachio nuts

Confectioners' sugar to dust each of the finished Cannoli's maybe about 1/2 Cup

First thing you will want to do is take your ricotta and place into cheesecloth and wrap it into a ball and then you will tie a knot in the top part of the ball you have made. You will want to hold over night if possible to drain the water from the ricotta. If you have some way to hang the cheese ball in your refrigerator that would be best. You will need to have a bowl under the cheese to catch all of the moisture that will drain off of the ricotta. The shells that you have made will hole for a couple of days if you want to make these in stages. They are worth the wait, and the time taken to make these little delicacies.

First you will take the drained ricotta and get it into the bowl and work it for a minute or two to get it more pliable. You will gently start to combine the cheese, and the sugar into a mixing bowl, and fold in with a spatula until you obtain a light, airy blend of ingredients. You will start to fold in the minced candied fruit and the chocolate very gently. You will then start to spoon the cheese filling into a pastry bag, or a large Ziploc if you do not have a pastry bag. You will then twist the top into a knot to keep the filling from emerging, and fill each of the Cannoli shells, squirting the filling in from either end.

Once you have all of the shells filled you will dip the ends of the cannoli in the pistachios. You will then arrange all of the Cannolis on a platter, and sprinkle with a little powdered sugar, and they're ready. If you would like to garnish you can save some of the candied cherries and place them on the center of each Cannoli after the powdered sugar has been applied. Then serve, and enjoy.
