Homemade Ice Cream
Although the ingredients are simple, the taste is divine. Milk, eggs, cream, sugar, fruit and flavoring will mix up just about any flavor of this delectable treat. Home made ice cream will start with a cream base. Adding the ripest fruits available will enhance the flavor and create a stir at the table when it is served.
Through the freezing process, the other ingredients are added, which are ice and air. Basically the more you mix it, the more air in the ice cream and the lighter it is. When you shop for it, you may notice that some boxes are heavier than others even though the fluid ounces are the same. That is because of the air that is mixed in during the freezing process. Premium ice creams will be heavier than their less expensive counterparts.
There are two basic styles. American style, also called New York or Philadelphia style and the custard style or French custard style. American style is made without egg yolks and does not require any cooking.
Custard style uses eggs which are added to hot milk and sugar. Whisking the mixture over a low heat until it coats the back of the spoon assures a good beginning to the treat. This rich and smooth ice cream is the result of the egg yolks in the mixture which act as an emulsifier. Custard style should be cooled at least an hour before freezing. American style is made without the addition of eggs and no cooking. It is a delicate tasting ice cream due to the small amount of ingredients used.
Home made ice cream can be made in a hand crank maker or an electric one. If neither of these is available you can place the mix into the freezer and let it freeze. It is advisable to take it out once in awhile and stir it well to make it a little smoother and add that air we were talking about.
Once the mixture has thickened in your machine and is hard to stir, remove it and transfer the container to the freezer. Allowing it to freeze for several hours will help the flavor. It is also a difficult task because everyone knows just how delicious it is.
Taking a basic vanilla ice cream recipe and getting creative with very ripe fruits and possibly some nuts, such as walnuts or pecans, will enhance the taste and make your mouth start watering before it is even close to being done. This can be a great family activity and one that can be used on picnics or backyard barbecues. It is the perfect dessert for young and old alike. Making the ice cream when there is no freezer available for the finale is possible. The difference will be the texture. Without freezing, it will be more of a soft serve consistency.
Some of the fruits you may want to add are peaches, raspberries, bananas or strawberries. Simply mashing the fruit and adding it to the mixture during the churning process will incorporate the ingredients very well. Flavoring other than vanilla can also be used. It depends on personal taste and experimenting with different flavors will just enhance the experience.

Edible Home School Science Experiment - Homemade Ice Cream

It's a warm day, and you would like to take your kids out on a picnic. How about converting a homeschool science experiment into an ice cream making session? Amaze your kids by showing them that with their help, you can make ice cream for them, and that too at their favorite picnic spot.
You will need to do some preparations the previous night or an hour before you set off for the picnic. Boil a mixture of one cup of milk with half a cup of sugar and a pinch of salt in a boiling water bath. Add three beaten egg yolks to the mixture and stir till you get a thick custard-like mixture that coats the spoon. Cool it and add vanilla essence and about two cups of heavy whipping cream and stir. Pour the mixture in 3 to 4 small zip-lock bags, each enough to make one serving. It is preferable to secure this bag with another zip-lock bag. Now put the zip-lock bags with the mixture in an ice chest full of ice. You can now put the ice chest in your car as you travel to your favorite picnic spot. It is very essential that the ice does not melt on the way for your home school science experiment to be a success.
At the picnic table you can put each zip-lock bag into a larger zip-lock bag that is half filled with ice. Sprinkle some salt over the ice and seal the large bag. Do this with all the smaller bags containing the ice cream mixture. Adding a little water to the ice will help enhance the process. Have as many such bags as many kids there are. Hand over one such bag to each kid and ask the kids to squish and shake the bags. Maybe they can toss them up and catch them. The more they squish and shake the bags the faster will the mixture turn into ice cream. Let them have fun with the bags for ten minutes. You can allow another five minutes of shaking, shaking and shaking!
Then ask each kid to bring their ice cream pack to you for examining. Open each bag, and voila! Ice cream's ready! Once done, let them enjoy their frozen treat! Isn't this a fun home school science activity? How did the liquid mixture turn into ice cream? And that too, quicker than it would take in a refrigerator? The very first thing to remember is that you have divided the mixture into smaller bags and not into one container as you would do in a refrigerator. Without salt, when ice melts (at 0 degree Celsius or 32 degrees Fahrenheit), it turns into water by absorbing some heat from the atmosphere. At the same time the water gives out heat and refreezes into ice. This is called a state of equilibrium. The mixture requires a temperature less than 0 degree Celsius in order to make ice cream.
Salt breaks this equilibrium by changing the make-up of the ice and the water. Now the ice melts, but the water does not refreeze into ice since it now requires a temperature less than 0 degrees Celsius to refreeze. The ice now gets no heat to melt, and therefore draws heat from the mixture, making the ice cream mixture even colder.
Furthermore, salt (sodium chloride) splits up in the water into charged particles of sodium and chlorine. The whole mixture of ice, water and salt now becomes a special compound that freezes at a temperature of -21.1 degrees Celsius or -6 degrees Fahrenheit. Now the good news for all of you sugar-addicts out there who love this tasty treat is that you can still enjoy it, but at a much lower expense! That's right, you alone can create ice cream, straight out of your own kitchen!
Ice cream contains a variety of nutrients and with a vast array of recipes, everyone can enjoy some form of this frozen fiesta! Whether you are looking for a lower sugar, low calorie, or what have you, that are many different recipes for your individual needs.
Lots of different milk products can be used in making ice cream at home, including whole milk, condensed milk and instant skim-milk powder. Skim-milk powder is used give the ice cream more body and increase the contents. It's also an important source of protein which will improve the ice cream nutritionally for those of you who are more health-conscious. Using quality, fresh powder will avoid a stale flavor to the ice cream.
Another common ingredient in homemade ice cream is sugar, used as a sweetener, it gives the ice cream body and texture. The next ingredient is gelatin, which helps in absorbing some of the free water in the ice cream mix. It also helps prevent the formation of large crystals in the ice cream.
The next step is preparation. The mix has to be cooked, or pasteurized. For cooking the mix, it is best to use a double boiler to prevent scorching.
You will place the liquid ingredients (milk, cream or coffee whitener) in the upper section of the double boiler. Beat in the eggs and the skim-milk powder. Mix the gelatin with the sugar and add to the liquid with constant mixing. While stirring, heat to about 70 degrees Celsius. Place the container in cold water and cool as rapidly as possible to below 18 degrees Celsius.
Finally, when freezing the mix, make sure all parts of the freezer coming in contact with the ice cream are clean and have been scalded. Let the can cool before pouring in the mix. Freeze the mix for 20 to 30 minutes. In the event that your electric motor stalls, immediately unplug it. Remove the motor or crank and take the dasher out of the ice cream. The ice cream will be softly frozen. Scrape the ice cream out and either scoop into suitable containers or pack in the freezer can. Immediately place the ice cream in the deep freeze to harden.

Delicious Chocolate Mocha Almond Homemade Ice Cream

Homemade old-fashioned ice cream, what could be better? I remember being much younger and my mom making vanilla ice cream using rock salt, ice and an electric ice cream maker. It would come out of the ice cream maker soft and soupy. I don't remember the ice cream ever actually making it to the freezer, as my brother and I would eat it as soon as it was ready from the ice cream maker.
Being older now, I still enjoy vanilla as much as the next person, but love many new flavors such as this chocolate mocha almond ice cream recipe. I hope you will as well.
1 Cup whole milk
5/8 Cup granulated sugar
8 Ounces milk chocolate chips
2 Cup heavy cream
1 teaspoon vanilla
½ teaspoon almond extract
2 Tablespoons Coffee concentrate syrup (can instead use cold coffee or instant espresso)
Heat the whole milk until it is just bubbling around the edges (this can be done on the stovetop or in the microwave). In a blender or food processor fitted with a metal blade, pulse to process the sugar with the chocolate until the chocolate is very finely chopped. Add the hot milk; process until well blended and smooth. Transfer to a medium bowl and let the chocolate mixture cool completely. Stir in the heavy cream, vanilla and almond extract. Cover, refrigerate, and chill for 2 hours longer.
Following the directions on your ice cream maker, pour the mixture into the container and let mix until thick, about 20-25 minutes. Can be enjoyed immediately or if you want a firmer ice cream, transfer into an airtight freezer container and place in the freezer at least 2 hours.
***This recipe is for a 1-½ quart ice cream maker container. Do not double this recipe, as the mixture will expand while it is being stirred in the ice cream maker.
This is a very smooth and silky chocolate ice cream recipe that would be perfect with another dose of chocolate sauce drizzled on top and sprinkled with sliced almonds. Happy eating!

How to Make Homemade Ice Cream (Without an Ice Cream Maker!)

COLFAX, WISCONSIN -- June is Dairy Month and what better way to celebrate than with homemade ice cream?
When I was growing up on our small family dairy farm in west central Wisconsin 40 years ago, my dad would make homemade ice cream using cream and milk from our very own cows and a hand-cranked ice cream freezer.
But you don't need an ice cream freezer to make your own homemade ice cream. You can make ice cream with your refrigerator. Here's how:
Dad's Favorite Recipe (From the book: Give Me a Home Where the Dairy Cows Roam -- True Stories from a Wisconsin Farm. Coming Soon -- Fall 2004)
2 eggs
3/4 cup sugar
2 tablespoons cornstarch
1 cup milk
1 pint heavy whipping cream
pinch of salt
2 teaspoons vanilla
Using an electric mixer, beat the eggs for several minutes until thick and lemon colored. Add 1 cup of milk and blend into the eggs. Mix sugar and cornstarch in a large saucepan. Add egg/milk mixture to the sugar and cornstarch. Cook until thick (about 5 minutes) stirring constantly. Allow the custard mixture to cool to room temperature.
When the custard is cool, put into a freezer-safe bowl. Blend in cream and salt. Freeze for 2 hours or until slushy. Add 2 teaspoons vanilla. Whip for 5 to 10 minutes with an electric mixer. Return to freezer and finish freezing (several hours or overnight).
Variations:
After you have whipped the ice cream, fold in 1 to 2 cups of fresh or frozen fruit, nuts and/or chocolate before returning the ice cream to the freezer to finish freezing.
Here are some ideas for additions to your ice cream:
Strawberries
Blackberries
Raspberries
Peaches
Cherries (or Maraschino Cherries)
Chocolate chips
Butterscotch chips
Crushed Heath bars
Crushed peppermint candy
Chopped walnuts
Chopped pistachio nuts
Diced bananas
Coconut
Chocolate chip cookie dough (drop into the ice cream by small spoonfuls and carefully fold in)
Caramel or chocolate or fudge syrup (drop into the ice cream by small spoonfuls and carefully fold in)
