How to Make the Perfect Ice Cream Sandwich

Making a choice when it's desert time is never easy. In fact it can be down right unpleasant to choose just one treat. That's why I love combinations; lemon meringue pie, fruit salad with pancakes, brownies and cream.

My all time favorite is the ice cream sandwich. There's something about the crispy delicious crumbliness of the cookies combined with the chilled, smooth sweetness of a great ice cream that works so well. And you get to eat them with your hands! They are a winner in everybody's books.

I think the best choice for the bread in this sandwich is a nice crispy choc-chip cookie. I like to make the mixture a little thin and cook them for just a bit longer than usual so they're nice and crispy. You'll have to resist using them straight out of the oven. For one thing they'll be too soft, and for another the ice cream will melt. Put them into the freezer wrapped between layers of cling-film for the most authentic effect.

Now for the filling. I don't think you can go passed a great traditional vanilla. It's sweet with that hint of richness that matches the choc chips in the cookies so well. You could try other flavors, But I'm sure before long you'd come back to the old faithful.

Assembly couldn't be easier. Take the cookies out of the freezer, and take out your ice cream. Scoop it out of its container and spread it onto a chopping block in a layer about ½ an inch thick. Cut it with a knife to match the size of the cookies, put a slice on top of one and place another on top and put the lot back into the freezer for half an hour or so. Eat them when ever you want! They will be great.
