Perfect Apple Pie Starts With Perfect Pastry Crust

Everyone loves America's favorite dessert - apple pie. There are hundreds of taste-tested recipes for this wonderful dish, each one unique in flavor and texture. Some people like a traditional apple pie filling in a flaky crust, while others like the interaction of the apples with other fruits, crusts made from a variety of different ingredients, and non-crust toppings such as cheese or cookie crumbs. Making a homemade apple pie is easy with the right ingredients, recipes, and cooking techniques. It's next to impossible to make a poor tasting apple pie when you start with good, fresh ingredients. To make a great traditional style apple pie, however, you need to start with an amazing pastry crust.

Start your perfect pie crust with quality ingredients that have been refrigerated before you begin your pastry crust recipe. That means every ingredient including the flour. Any liquids going in the pastry should be ice cold. Use an all-purpose flour, not bread or cake flour, as neither is suitable to achieve a tender, flaky crust. Lard and shortening produce the best pie crusts. Using half butter and half shortening will result in a flaky pie crust with a rich buttery flavor. The flakiness in the pie crust comes from the fat that is used in the pastry recipe. Cut in your fat by using a pastry blender, or a fork, and just cut in the butter and shortening until the dough resembles tiny pea size pieces. When a recipe calls for water, substitute ice-cold sour cream or heavy cream and the result will be an even flakier crust.

When the pie crust is the perfect texture and consistency, pat and press the dough into a ball, wrap in plastic wrap and place it in the refrigerator for 30 minutes. The refrigeration time relaxes the dough and makes the job of rolling it out into a perfect circle easier. Remove the dough from the refrigerator, place on a floured board and starting from the center carefully roll outward. Flour your rolling pin as necessary. Roll your dough into a circle that is 2-inches in diameter larger than your pie plate. Cover the dough again in plastic wrap, and refrigerate and additional 30 minutes.

Place your pie dough into the pie pan and trim the edges. Your pie dough is now ready for filling. Pay careful attention to recipe details as some pie crusts will need to be pre-baked, need small holes pricked in the bottom of the pie crust to allow steam to escape, or have the edges covered with foil to avoid the crust from overcooking. When you start with the perfect pie crust you are on your way to the perfect apple pie.

3 Easy Strawberry Ice Cream Recipes

If you are in the mood to make ice cream with your ice cream maker, these three easy strawberry ice cream recipes can make a nice summer treat. Each are different, so you have options depending on the ingredients you have at home.

Recipe #1 - NON-DAIRY STRAWBERRY

2 teaspoons kosher gelatin

1/4 cup apple-strawberry juice

2/3 cup all-fruit strawberry jam

3 cups vanilla soy milk

1 teaspoon vanilla

1. In a small bowl, sprinkle gelatin over apple juice. Let sit, stirring occasionally, until gelatin is dissolved and softened, about 10 minutes.

2. In a medium saucepan, whisk together jam and 2 cups soy milk. Cook until just hot, stirring frequently; remove from heat. Add softened gelatin to hot milk mixture, stirring until gelatin is completely dissolved. Stir in remaining soy milk and vanilla; let cool, cover, and refrigerate until very well-chilled.

3. Spoon chilled mixture into the canister of an ice cream maker and freeze according to manufacturer's directions.

Makes about 1 quart.

Recipe #2 - OLD-FASHIONED STRAWBERRY

1 pt Strawberries

1 c Sugar

1 Egg

1 c Half and half

1 t Vanilla

3 c Heavy cream

Hull the berries and cut the larger ones in half. Place the berries in a double boiler and add 1/2 cup sugar. Heat for 10-15 minutes, stirring occasionally, until the fruit is very soft. Puree the fruit in a blender. Transfer puree to a bowl and cool in the refrigerator.

Put the egg, half and half, remaining sugar and vanilla extract in the blender and blend on medium speed till mixture is smooth and the sugar is dissolved. Slowly add the cream and continue blending on low speed for 30 seconds. Transfer the mixture to your ice cream freezer and freeze according to manufacturer's instructions.

When the ice cream is about half frozen, add the strawberry puree to the mixture. Continue freezing. Makes slightly more than 1 quart.

Recipe #3 - STRAWBERRY SORBET

You might make extra purée and use it as a sauce under the sorbet. A fresh mint spring makes a pretty garnish.

2 pints strawberries, washed and hulled

1 cup plus 2 tablespoons superfine sugar

1/4 cup fresh lemon juice

Purée the strawberries in a food processor. You should have about 3 cups. Stir in 1 cup of the simple syrup and the lemon juice. Taste and add remaining syrup if necessary. Pour the mixture into the bowl of the machine and freeze.

Makes about 3 1/2 cups.

Mastering That 3D Cake

In "Making a 3D cake at home", I went through the basics of taking a boxed cake mix and basic cake pans and building them into a wonderful character or object of your choosing. It usually takes 2 boxed cake mixes to accomplish the scale of cake that can reasonably feed a crowd of people. Most box cake mixes turn out a cake that is soft, moist and easily can crumble and fall apart, which makes is difficult to manage when manipulating into your shape. Taking out the fat from the egg yolks added and only adding egg whites makes the cake more spongy, and much easier to handle when cutting and standing up on it side. It gives the cake the strength it needs to stand up to a lot of icing as well. I love the texture of the cake that results from doing this. I also substitute milk for the water, to add a little more moisture. While building the cake, my daughter and I eat every leftover corner or cutout left behind, because it is so good. Using a good serrated knife, or bread knife when cutting the cake helps to keep from tearing or crumbling the cake. Once you have cooled your cake completely and cut your round cakes into halves, (I cut 2 round cakes into halves) you can begin to assemble them on a prepared cardboard cake board.

The shape of the object you are building will determine the way you place your cake pieces on the board. I will use the dinosaur for my example. I placed the cut round halves with cut side to board, using 3 halves side by side for thickness. The halves will stand well untill you get everything arranged to the shape you want them, then you can use icing to glue them together and crumb coat your cake. I then take the last half of the round cake, cut it in half and stand these two pieces up on their side on the cake board for the head, placing it in on the front side of the other 3 half rounds. For the tail, I cut the last round cake into a half moon shape and place it behind the rounds. You can curve it whichever way you want. For the legs, I made 4 egg shapes, using the Wilton egg shaped pan, which are perfect for the legs. Place these to each side. You can secure these with small wooden dowel rods, or just glue on with icing. Stand back and look at your shape, tweak where you need to. I curved my dinosaur a little on the board. When you get everything arranged into the shape you want, go ahead and place buttercream icing between pieces to stick them together and gently ice over all the pieces for a crumb coat. This prevents excess crumbs on your final icing.

Icing the cake, like I said is the most time consuming part of the process. I use buttercream icing from a basic recipe. You will need to double the recipe for enough icing to fill in your cake. A wonderful basic buttercream icing recipe is as follows.

1/2 cup butter

1/2 cup shortening

4 cups powder sugar

2-3 tbsp. milk

1 tsp. vanilla flavoring

I use gel coloring to color the icing. I usually separate it into separate bowls and color it, using a large part for the body and smaller portions for shading and details on the form ie., eyes, claws, spiney forms on dinosaur. I used green for the large portion of the body, a shade darker to enhance around the legs, and create the spines on the back and tail, black for the claws, white for the eyes and teeth. I used just a plain small round tip for the small details. It is necessary to fill in the spaces between the head and body, around the legs and between the tail and body, building with the icing with the star tip to get the full shape you want. Looking a picture of your object is a big help with enhancing the coloring. Embellishments with candies and chocolated cut to shapes is another great idea. I put small chocolate chips in the eyes. You can get as extravagant is you like. The options are endless. After your first one, a basic sheet cake just will not do. It is a lot of fun and your kids will love getting into the decorating. The hard part is watching it get devoured at the party!

And I saw the rushes of the guests to get to the ball room, including myself in the mob because I wanted to see the decorations that Vicky had done! But in the high heels that I was wearing, the rush became a bit slower than what I had in mind... I was walking hand in hand with Vicky to get to the ballroom when something caught my eye. A guy who was about 15 meters away staring at me! Not Natalie, something that was normal, but me! It was kind of weird for me...having Natalie next to me and getting a boys attention. Cuisinart Ice Cream Maker

I finally broke down and bought a Cuisinart Ice Cream Maker and I've got to tell you, I'm glad I did. I have a family of 10 and being able to make two quarts of homemade sherbet, sorbet, and frozen drinks is a real treat.

As I said, I have a family of 10, so we needed a pretty hefty Cuisinart ice cream maker to keep up. We went with the ICE-30BC which I have to say, is pretty well made. It's rugged, looks killer, and works like a charm.

The only flaw is, you have to freeze the bowl for a good 24 hours in order to get your creation to the proper consistency.

The Cuisinart Ice Cream Maker company has another model that I've got my eye on. It's a commercial Cuisinart ice cream maker and it has its own, built-in freezing chamber. That means, no bowl freezing. Just turn it on and 30 minute later, ice cream!

The down side to that is, it's $300. BUT, I also found a similar maker (another brand) for $700 so I guess it's not that bad.

Let me tell you a little bit about the history of this frozen confection, I think you'll find interesting.

The Emperor of Rome (Nero) was credited with having sent his servants into the mountains to collect snow. This was then mixed with nectar, fruit pulp and honey. Sure, it wasn't as convenient as a Cuisinart ice cream maker, but it must have been a tasty treat!

No one knows for sure the origin of this fantastic frozen delight, but in the 13th century, Marco Polo came back from Asia with recipes for 'water ice'. Apparently the Asians had been using them for thousands of years.

Italo Machiony had a cute little pushcart where he sold his homemade frozen dessert on Wall Street. He invented a waffle cone to keep people from running of with his glass cups and patented his idea in 1903.

No matter what you call it, or who made it, whether it contains fruit, nuts, chocolate, or peanut butter (my favorite) you really do need to be able to make your own. Not only is it a bit less expensive, but there are NO preservatives and you can put exactly what you want in it.

When you put out the coffee and tea for everyone, include sticky buns in place of cookies or cake. You will receive rave notices! Perhaps you think of cinnamon rolls when you hear the term "sticky buns". They are similar but there are distinct differences. Both start with sweet yeast bread dough but that is where the similarities end!

Cinnamon rolls or buns consist of substantial 'bread like' layers with cinnamon in between and white frosting on top. Sticky buns are very thin layers which are achieved through rolling and stretching of the dough. It is then spread with melted butter, chopped dried fruits (currants and raisins are typical), sugar and imported Vietnamese cinnamon.

The dough is then rolled and cut into pieces which are placed into pans which have been prepared with a light caramel sauce and nuts. Once baking is complete, the pan is quickly inverted so that the "sticky" can run down between the layers. Now they are ready to enjoy! Or ship to friends as gifts or pop into your freezer for future use.

Variations on this theme have produced some very exciting "gourmet" buns for a special treat or addition to a more exotic menu. A variety of fruits, citrus zests, an assortment of nuts and incorporation of brandy or liqueurs elevates this tasty treat to new heights!

Baking fell from the graces of popularity in the mid nineties, and so did the pans availability. Now, baking is becoming popular once again, but the availability of the pans isn't growing nearly as fast. So we're currently facing a double dilemma, the pans are hard to find and when you can find them they're very expensive. So what to do? Read on to learn!

If you live in an area that is very food-centric, there will be large stores that are dedicated kitchen and restaurant supplies. Here you will find every size cake pan imaginable at a great price. The problem with these places is that many of them are wholesalers, and you may need a license or be associated with a restaurant to shop there. This obviously won't work if you don't have either of those qualifications. If you know a local restauranteur, you may be able to get in with them (and not pay any sales tax!) but if you don't this won't be an available option for you.

The other place to turn to get great deals on cake pans is the internet. When browsing, you're going to come across a lot of sites that look like they haven't been updated since 1997, but many of them are worthwhile places to shop. If you are looking for something that is a bit more up to date, check out Amazon. They have almost every cake pan around, and everything is a great price. Most orders will qualify for free shipping if they are over the amount threshold, and you'll get everything fast. If you're looking for a great deal on out of print cake pans, turn to eBay. You can expect to pay anywhere between $20 and $100 for these old school pans, but they're there. This is especially true for the hard to find Star Wars cake pans.

A few of the manufacturers will sell directly from their websites. Nordic Pro has a great shopping side of their site, as does Wilton. If you come across a pan that doesn't have the instructions for decorating, the manufacturer's website will usually have them there for download.

Ice cream is just about every American's favorite dessert, and it shows in dentist chairs all across the country. Now the good news for all of you sugar-addicts out there who love this tasty treat is that you can still enjoy it, but at a much lower expense! That's right, you alone can create ice cream, straight out of your own kitchen!

Ice cream contains a variety of nutrients and with a vast array of recipes, everyone can enjoy some form of this frozen fiesta! Whether you are looking for a lower sugar, low calorie, or what have you, that are many different recipes for your individual needs.

Lots of different milk products can be used in making ice cream at home, including whole milk, condensed milk and instant skim-milk powder. Skim-milk powder is used give the ice cream more body and increase the contents. It's also an important source of protein which will improve the ice cream nutritionally for those of you who are more health-conscious. Using quality, fresh powder will avoid a stale flavor to the ice cream.

Another common ingredient in homemade ice cream is sugar, used as a sweetener, it gives the ice cream body and texture. The next ingredient is gelatin, which helps in absorbing some of the free water in the ice cream mix. It also helps prevent the formation of large crystals in the ice cream.

The next step is preparation. The mix has to be cooked, or pasteurized. For cooking the mix, it is best to use a double boiler to prevent scorching.

You will place the liquid ingredients (milk, cream or coffee whitener) in the upper section of the double boiler. Beat in the eggs and the skim-milk powder. Mix the gelatin with the sugar and add to the liquid with constant mixing. While stirring, heat to about 70 degrees Celsius. Place the container in cold water and cool as rapidly as possible to below 18 degrees Celsius.

Finally, when freezing the mix, make sure all parts of the freezer coming in contact with the ice cream are clean and have been scalded. Let the can cool before pouring in the mix. Freeze the mix for 20 to 30 minutes. In the event that your electric motor stalls, immediately unplug it. Remove the motor or crank and take the dasher out of the ice cream. The ice cream will be softly frozen. Scrape the ice cream out and either scoop into suitable containers or pack in the freezer can. Immediately place the ice cream in the deep freeze to harden.

How to Make a Hoosier-Style Mardi Gras Layer Cake That is Yummy!

I don't know how this cake got its Mardi Gras name. It is an old recipe I got many years ago from an old childhood friend. I had never been to Mardi Gras and don't believe she had either, at that time. Fifty years later, I still haven't been to Mardi Gras and have no idea if she ever has. But if you like butterscotch, you will think our Mardi Gras cake is yummy!

HOOSIER-STYLE MARDI GRAS PARTY CAKE

2/3 cup butterscotch chips
1/4 cup water
2 1/4 cups all-purpose flour
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 1/4 cups sugar
1/2 cup butter
3 eggs, unbeaten
1 cup buttermilk

Preheat oven to 375 degrees. Grease well and flour two round cake pans. In a small saucepan melt the butterscotch chips in the water. Cool. Sift the flour with the salt, baking soda, and baking powder; set aside.

Add the sugar gradually to the butter in large mixing bowl, creaming well. Add the eggs and beat well. Blend in the melted butterscotch chips. Add the dry ingredients alternately with the buttermilk, mixing well. Pour into the prepared pans, dividing evenly between the two pans. Lightly tap on countertop to remove any air pockets. Place in the oven and bake at 375 degrees for 25 to 30 minutes or until a wooden toothpick inserted in the center comes out clean. Cool in pan for a few minutes then remove to racks to cool.

BUTTERSCOTCH FILLING:

1/2 cup sugar
1 tbsp cornstarch
1/2 cup evaporated milk
1/3 cup water
1/3 cup butterscotch chips
1 beaten egg yolk (reserve white for frosting)
2 tbsp butter
1 cup coconut
1 cup chopped pecans

Combine the sugar and cornstarch in a saucepan. Stir in the evaporated milk, water, butterscotch chips, and egg yolk until blended. Cook over medium heat until thick, stirring continually. Remove from the heat and add the butter, coconut and pecans. Place one of the cake layers on the cake plate. Spread the filling to 1/2" of the edge of the layer. Set the second cake layer over the filling. Frost the top and sides of the cake with the following:

SEAFOAM FROSTING:

2 cups brown sugar
1 cup water
2 egg whites
1 tsp vanilla

Boil the brown sugar and water until it makes a soft ball when you place a drop in cold water. Beat the egg whites until stiff; stir in the vanilla. Slowly pour the brown sugar mixture into the stiffly beaten egg whites, beating until stiff enough to spread. Frost the top and sides of the cake.

Mexican Dessert Recipes - Delicious Desserts

If you enjoy enchiladas, you are sure to like the next Mexican dessert recipe. Apple enchiladas can be served hot with vanilla ice cream. To make the enchiladas, fill tortillas with canned apple pie filling. Then you will prepare a sauce on the stovetop, make from butter, white sugar, brown sugar, and water. Pour the sauce over the enchiladas, and bake them in the oven for about twenty minutes. Then enjoy!

Flan is a classic Mexican dessert that is served in most Mexican restaurants. Not everyone likes it, but when it is prepared correctly, it can be really great. One caveat before making flan: you will need ramekins to bake the flans in, so purchase them before you get started! You will cook sugar in a saucepan until it is caramelized, and then pour some into each ramekin. Then mix together several eggs, sugar, evaporated milk, and vanilla. Pour the custard mix into the ramekins. Bake it in a water bath until an inserted knife comes out clean, about forty-five minutes. You may either enjoy it warm or chilled.

Sopapillas are similar to empanadas but they are fried. You make dough from flour, baking powder, salt, shortening, and water. Then you form the dough into small balls and fry them in vegetable oil. 1.       Change the water daily. This is the simplest way to make flowers last longer. Nothing like fresh clean water to help keep the flowers drinking. Hydrated flowers are happy flowers.

2.       Cut the stems at an angle. Cut your flowers before you first put them in water if you buy them loose. Also cut them every couple of days. Make sure to use sharp scissors or shears, be careful not to crush the stems. This tip also helps with the water intake.

3.       Buy fresh flowers that are still in bud. When you look at the flowers at your local florist, the wide open ones always look the best but don't buy them. If the flower is already open it won't last that long. You want the flowers that are still in bud, or not open yet. Make sure the flower is still firm as well. You can enjoy them opening when you get them home. 

4.       Cleanliness is key. You want to put your fresh flowers into a clean container or vase. Like in rule #1 clean water is very important. So if your vase is dirty your water is dirty. Any bacteria can speed up the decay of flowers.

5.       No leaves under water. The leaves will start to decay and contaminate your water. It cannot be said enough flowers need clean water.

6.       Don't over heat your flowers. Keep them as cool as possible. Do not set them in direct sun light, keep them out of the draft from your heater. If you work in a kitchen and someone sends you flowers do not set them over the serving line. Well you get the picture. The hotter flowers get the quicker they will open and begin to wilt.

7.       Feed your flowers. Once again fresh clean water is the best thing for keeping flowers fresh. If you want to put something in the water make sure it is food. Your local florist will have some on hand. You can also find some good recipes on line.

A Short History of Desserts

Sweet desserts have existed since the beginning of mankind. It is now enjoyed by people throughout the world in variety of flavors. In the past, only the affluent society folk could afford it while the ordinary people could only enjoy it on special occasions. Advancement of sugar production allowed its more extensive spread and at much more affordable prices to customers. People enjoyed desserts worldwide because of the increased supply of sugar.

Desserts are thought to have originated from a custom to remove the aftertaste of a meal with a sweet taste as they leave the mouth with a sweet flavor. The name confection is derived from a French word 'desservir' which means to clear the table. Thousands of dessert varieties exist today. Ice cream, cakes and pies are some of the popular desserts that have been present around since ancient times.

The origin of ice cream dates back around the 4th century BC, the Roman emperor Nero had ordered his followers to gather ice and add fruit toppings for his dessert. A Chinese king named Tang developed an early form of ice cream by combination of milk and ice. Ice cream was brought back by traders to Europe. Ice cream continued to evolve during history and recipes were soon developed for serving the French and Italian aristocracy.

Ice cream was introduced in America in 1700s. Many states offered ice cream as a dessert. It was served to guests by distinguished figures like Thomas Jefferson, George Washington and Dolly Madison. A caterer from London advertised in a New York paper in 1774 announcing his intentions to sell ice cream in his stores.

The word 'cake' is derived from an old word 'kaka'. The first use of word 'cake' was documented by the Oxford English Dictionary in the 13th century. Cakes eaten in ancient times were very different than today. Early cakes resembled with bread and honey and flavored with dried fruit and nuts. Early Egyptians were the first who used advanced methods in baking. Medieval Europe baked gingerbreads and fruitcakes as desserts. Advancements in baking and availability of cooking ingredients helped in the development of cakes. Round cakes with icing resembling with today's cakes were introduced in the mid 17th century. Modern cakes with baking powder and white flour were used for the first time in the 19th century.

Pies originated as dessert in Neolithic Period in 9500 BC. They were known as galettes which contained honey and different grains, it was baked on hot coals. The origin of pastry was an addition of bakers fruit, honey and nuts for serving the pharaoh. Drawings relating to this practice are decorated on the tomb of King Ramses II. Changes often occurred in the making of pie because of different ingredients and conditions.

Pie recipes were brought by Pilgrim women to America which was used by the Native Americans. A tradition of using round pans for pies were started was started by colonial women. Pies became a part of American culture in the 1700s as it was served as desert by pioneer women. Apple pie became a popular evening dessert for the American children.

If you have visited a fast food lately and ordered a kids' meal, you probably saw that they come with a variety of fast food toys. There are even ads for toys all over the outlets. It is estimated in some researches that an average American child gets the one third of his toys from a fast food restaurant, especially companies such as Burger King or the McDonald's.

These studies show us two different things; first of all, we get to understand that incentives or even toys for sale in fast foods are extremely popular among kids and parents; McDonald's for instance, is one of the largest toy manufacturers in the world, featuring more than a million different toys and a billion different figures. Some of the meal toys are based in real cartoons and TV show characters. When buying a fast food meal you can get a miniature of Lilo and Stitch, the Lion King or some die cast cars. Actually, depending on the fashion and the times, you can find different figures and fast food toys; some companies have also the exclusive rights in selling particular toys. Burger King is the only fast food company that can sell Teletubbies.

Why do fast foods give children toys, since they are supposed to be restaurants and food related businesses? It is a game of attraction actually, since kids adore toys, so that give them an extra reason to want to visit the fast food; the fast food toys become a strong motivation.

The second observation related to these studies on toys is that parents do not perform their role of food providers that successfully, therefore their children eat at fast food restaurants far more often than they should. Especially since fast foods were directly associated with obesity, parents should try to avoid them as much as possible. In any case, kids like them, but they should not visit them that frequently.

Five Gym Rules to Live By

Stressed? Short on time? Need to exercise?

Follow these rules to get the most effective workout in the least amount of time.

1. Multi-joint exercises. When time is of the essence, choose exercises that engage more than one muscle group. For example, instead of doing lateral raises (which only engage the deltoids), you should do the shoulder press (which engages the deltoids and the triceps). As another example, choose squats (which work the quadriceps and glutes) over leg extensions (which only work the quads). By choosing exercises that involve more than one joint, you can recruit more muscles in less time.

2. Minimize rest periods. Have you ever been in the gym and found your mind wandering to better days? Days when you were strong, svelte, and could eat anything without consequence. Well, the gym isn't the place for reflection. (I think there's some kind of pool for that.) Instead of doing nothing between sets, do an exercise that works the opposing muscle group. For example, do a set of pushups followed immediately by a set of pull ups. Repeat this sequence until all sets are complete.

3. Avoid the machines. When you use fixed path machines, you are forced into an unnatural position. Many of these machines require the use of both limbs, which hides any muscular imbalance that may be present. They also provide so much assistance that fewer muscles are engaged and range of motion is limited. When possible, opt for free weights to work your muscles at varying angles and to correct any muscular imbalances.

4. Plan your workout. If you mindlessly walk into the gym, your workout will most likely suffer. You'll find yourself staring at people in spandex, walking around aimlessly, or losing focus during your set. When you have a clear purpose, your brain will signal to your muscles that, "It's business time". Need a game plan? Designate a day for each body part.

5. Change it up. To continue to see results, your muscles must be stressed. This concept is the Principle of Overload: a system must be exercised at a level beyond which it is accustomed to achieve a training effect. How do you do that? Vary the intensity, duration, or frequency of the specific exercise. You must ALWAYS challenge your body to avoid hitting a fitness plateau.

However, playing the game was a different matter. He played because Mom and Dad told him he could have ice cream if he would get out on the field and play. Evan runs out of the video frame at the beginning, and at the end he runs back into the frame. It's just too funny for words, but he had a good time, and so did we!
